shrimp and grits

last sunday for a post-valentines day brunch, i decided that i wanted to prepare shrimp and grits. it seems impossible to get this dish at any restaurant here in austin and i haven’t been able to eat it since moving to tx a year ago. i was really worried this wouldn’t turn out right because i got the recipe from kevin and he’s never really sure about the measurements, but neither am i. in the end, it turned out splendidly. josh picked up all the ingredients on saturday and i even made a last minute trip to central market for orange juice and champagne so we could have mimosas with our meal.

ingredients:

shrimp

stone ground grits

green onions

crushed red pepper

salt

roma tomato

garlic

bacon!

butter

flour

chicken stock

directions:

cook grits in a pot with 1/2 chicken stock and 1/2 water to add flavor, add green onions and crushed red pepper to the grits. meanwhile, heat a 1/2 stick of butter in a skillet and add about 2 1/2 tablespoons flour to the butter. rapidly stir the butter and the flour to create the ‘gravy’. once the flour and butter have turned a brown-ish color, add the green onions, garlic and chopped tomatoes. then add the shrimp and pieces of bacon. stir, adding water to help liquefy the gravy and cook until the shrimp are done. add salt and crushed red pepper to flavor. serve shrimp and gravy on top of the grits and voila!
